Arnold Palmer’s Executive Chef Brett Maddock Receives Culinary Accolades From Recipe TV

 LA QUINTA, Calif. , January 29, 2007 – Executive Chef Brett Maddock knows that the heart of every restaurant is the kitchen, and he believes a well designed kitchen is the main ingredient to creating extraordinary cuisine. Therefore, late last summer when Chef Maddock embarked on the kitchen remodel at Arnold Palmer’s Restaurant located in La Quinta, California near Palm Springs, he paid special attention to detail in the planning, layout and overall design of the kitchen in order to form the efficient workspace in which to create a fresh new pallet of menu selections for the coming year.

Arnold Palmer’s Restaurant has multiple dining areas, inside and out, with a large overall dining capacity. These were important factors in the new design and flow of the kitchen. Not only was the kitchen redesign an increase in overall size, but also Chef Maddock brought in all new equipment and lighting to make the workspace efficient to handle his new menu. The updated menu now features Progressive American Cuisine with market fresh ingredients such as Pan Seared Sea Scallops with Southwestern Corn Relish and Braised Beef Short Ribs with Rosti Potatoes, Fresh Vegetables and Red Wine Bacon Sauce. As a well-seasoned Executive Chef and the restaurant’s General Manager, Maddock knows from experience that the kitchen should reflect the menu envisioned, and he wanted to create a diverse menu that would intrigue even the most discerning food connoisseur, with a range of options for every taste and age.

Over the past couple of years, Chef Maddock discovered that the guests of Arnold Palmer’s feel so at home in the restaurant that they would often enter the kitchen to speak with him and watch the staff preparing the meals on order. Therefore, when it came time for the kitchen redesign, Chef Maddock made a point of opening up the kitchen to several areas of the restaurant in order for his guests to have a more interactive dining experience.

After enjoying Arnold Palmer’s Restaurant first hand, Recipe TV took notice of the open kitchen environment and the enticing menu, and will be featuring Chef Maddock and twenty of his selected recipes from the restaurant menu starting February 5, 2007. Recipe TV highlights the world’s greatest chefs, amazing recipes, wonderful food and exciting lifestyles from around the world. Some of the new menu items that Chef Maddock has added to his extensive menu which he also prepared live in the upcoming segments for Recipe TV include: Ahi Sashimi with Sesame Dressing, an Herb Roasted Pork Loin with Creamy Truffle Polenta and Red Onion Chutney, and a Maple Soy Glazed Salmon with Vanilla Scented Yams.

When asked if the kitchen remodel was worth the time and resources spent, Chef Maddock said, “I’m thrilled with the results of the kitchen redesign, not only because it is a well-organized environment to work in, but most importantly, because our guests are enjoying new dining experiences and love the new menu at Arnold Palmer’s!”
